Currently, only 30% of the shrimp processing by-products are utilized. These by-products are commonly used as raw materials in various industries, such as crackers, terasi (shrimp paste), petis (shrimp sauce), animal feed, and fertilizer production. Shrimp shell by-products contain protein (31.58%), chitosan (53.84%), minerals (27.6%), and chitin (15.33%), and, which can be used in cosmetics, food processing, medicine, biotechnology, and pharmaceutical. Additionally, shrimp shells contain carotenoid compounds such as astaxanthin, which is often utilized as a natural pigment.
